Mandara Mozzarella di bufala or Mandara buffalo mozzarella is the most highly rated cheese in the world because it is made of buffalo milk. In 1983 the company was taken over by Giuseppe and Elisabetta Mandara, the nephews of the founder.

The history of the buffalo which produces this milk needed to make this world class cheese dates back to the seventh century when it came to Italy but the earliest reference of mozzarella cheese in history is only available from twelfth century only. The name mozzarella comes from the very action which goes into making it and which consists of tearing off the spun mass and giving it the typical round shape. This mozzarella cheese was very difficult to preserve and so it could not go beyond its production regions for a long time. It was mainly sold as the smoked version. Later on, with the development of technology and different companies like I.L.C MandaraS.p.A this mozzarella di bufala Mandara came into limelight.
